1 tablespoon fresh lemon thyme
3 pounds apples, cored and sliced. (peel them if you want; I did not)
3/4 – 1 cup turbinado sugar/or brown sugar/or any sugar, or as much as you would need
2-3 tablespoon cornstarch
2 tablespoon fresh lemon juice
2.5 tablespoons unsalted butter, cut into small dice + some more melted butter to brush on the pie crust before baking
1/2 teaspoon ginger powder/or 3 teaspoon grated fresh ginger + 2 tablespoon fresh lemon thyme + 1/4 teaspoon cinnamon
