- ½ c dry French green lentils
- 2 c water
- ½ medium red onion, chopped
- 2 Roma tomatoes, chopped
- ½ T finely chopped parsley
- ½ t finely chopped cilantro
- 1/3 c freshly squeezed lemon juice
- 2 T olive oil
- ½ t minced shallot
- Dash of granulated garlic
- Salt & freshly ground black pepper to taste
