5 ounces frozen leaf spinach, thawed and squeezed dry
½ cup mayonnaise
1 small shallot, minced (about 1 tablespoon)
½ teaspoon dried parsley
½ teaspoon dried dill
½ teaspoon white wine vinegar
¼ teaspoon salt
⅛ teaspoon pepper
Process all of the ingredients together in a food processor until smooth, about 1 minute. Transfer to a serving bowl, cover, and refrigerate before serving until the flavors have blended, at least 30 minutes or up to 2 days.
